Summer Cookies Recipe

Growing up, we always called these summer cookies. My mom made them all the time for us in the summer when I was growing up. In fact, every mom in our neighborhood had this recipe, and that is when everyone on our block started calling them summer cookies.  Since every mom was making them, we usually could have them every day. Since you don’t have to bake them in the oven, they are perfect for when it’s hot.

These are definitely a family favorite in my home.  In fact, when my youngest bonus son got married this summer, he asked me to make “Summer Cookies” for his reception.  I think I ended up making about 10 batches in a tiny cabin the day of the wedding. Everyone loved them!

Instructions:

Mix and bring to boil:

  • 2 cups sugar
  • 2 TBSP butter
  • 2 TBSP cocoa
  • ½ cup milk

Remove from heat and then add:

  • ¼ tsp salt
  • ½ tsp vanilla
  • ¾ cup peanut butter (can be chunky or smooth, but chunky is better)

Mix well.

Then add:

  • 2 cups QUICK uncooked oatmeal
  • Drop from spoon onto wax paper or parchment paper and let cool.
  • Makes about 3-4 dozen cookies depending on how big a spoon you are using to drop onto the wax paper.
