Sheet Pan Chicken Fajitas

Ingredients

  • 3 boneless skinless chicken breasts (2-ish lbs.) cut into strips
  • 1 large yellow onion, sliced
  • 1 red and 1 yellow pepper, sliced
  • 3-4 Tbsp. olive oil
  • 2 ¾ Tbsp. seasonings if made in bulk OR
  • 2 tsp kosher salt
  • ½ tsp pepper
  • 1 tsp smoked paprika
  • 1 ½ tsp chili powder
  • 1 ½ tsp cumin
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1-2 tsp lime juice
  • hand cull of cilantro, chopped
  • flour tortillas

Instructions

  1. Combine the seasonings. Mix chicken, peppers, onions, seasoning and olive oil in a bowl to marinate (a few hours if you have time but not necessary.)
  2. Spread chicken mixture evenly on a sheet pan.
  3. Bake for 20 minutes at 425 degrees
  4. Top with cilantro and lime juice
  5. Serve with: sour cream, guacamole, salsa, rice, beans, cheese and lettuce
