Mango Rice

Ingredients:

  • 2 cups white or jasmine rice
  • 2 cups coconut milk
  • 2 cups water
  • 1 teaspoon kosher salt
  • 1 teaspoon white vinegar
  • 2-3 teaspoons sugar
  • 1 tablespoon butter
  • 2 cups diced mango
  • ¼ cup chopped parsley or cilantro
  • ½ cup sliced green onions
  • ¼ teaspoon black pepper

Directions:

  1. Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil. Turn heat to low and cook covered 20 minutes or until most of the liquid is absorbed. Allow to stand 5 minutes.
  2. Add butter, mango, parsley or cilantro, green onions, black pepper, and additional salt, to taste.
